...I don't think Violin sheets are exactly in peoples minds when making DDr sheet music. Piano and guitar is all you're going to find pretty much.

Agreed. The Least 100 Seconds is a very very VERY tough song to play on piano. Try looking up Ride on the Light or Frozen Ray (which is also harder) to start on the piano Bemani road.
For the guitar, Jelly Kiss isn't too hard and Memories (the rock one, not the one from DDR) isn't too bad either. If you want something INSANE on the guitar, try to play Summer Vacation and blow your brains out.
In all reality though, Bemani sheet music is tough to come by because most of the music is electronically made and not much of it is an actual person playing an instrument.

If you found piano sheet music, it's easy enough to follow along on violin. I've done it before, and it's just slightly off, if at all.
