Arcades have used wood in their cabinets for years. Those pads are also painted and probably lacquered. I doubt termites would be a problem.

The Japanese cabinets also sounded far differently. The US cabs are just straight up flat sounding with no power behind them. If you played the Guitar Hero Arcade machine, it's the same poor quality ...

If it's the same Hazard mode from GFdm, you're allowed one combo break, but after that, it's Failed...however, on GFdm, you're still allowed to play your next stage if you fail, IIRC.
